SHIPPING & DELIVERY

Mycelium is extremely sensitive to temperature changes and transport conditions. Mushroom grain spawn is alive with mushroom mycelium. That’s why we strongly recommend shipping grain spawn via Express Post.

Dispatch

We ship orders Monday to Thursday. We do not dispatch grain spawn on Fridays to avoid it being in transit over weekends due to its heat sensitve nature. Any orders placed on Thursday after 12pm or Friday will be dispatched the following Monday.

Please note this applies to all orders, including Express Post shipments.

SPECIES DESCRIPTION

Species name: Lentinula edodes var. 3790

Shiitake are a signature gourmet mushroom with a strong umami flavour. This Shiitake strain 3790 is the most widely grown Shiitake strain in Europe and is our preferred Shiitake strain here at Little Acre due to it's plump and perfect caps. It will produce less pins than 3782 but the mushrooms are more dense and heavier, producing more mushroom weight. Pick just after the veil separates from the stem for heaviest, best formed shiitake.

Shiitake Mushrooms grow best on hardwood sawdust. We recommend using eco-logs or hardwood fuel pellets if you can not find sawdust. Alternatively, you can use the grain spawn to fill and plug holes in hardwood logs.

PREFERRED SUBSTRATE

Shiitake are fussy about their substrates and only grow on hardwood sawdust or hardwood logs.

For highest yields and premium shiitake, grow at low temperature on hardwood sawdust supplemented with a low percentage of wheat bran. Over-supplementation will cause misshapen mushrooms and can negatively effect yields.

Shiitake can not be grown on Masters' Mix as soy hulls are too nutrient rich.

INCUBATION

Incubation period: 8 - 12 weeks (sawdust blocks). The mycelium needs to form a brown crust all over the block before it's ready to fruit. Incubating blocks should be exposed to 12 hour light cycles, 12 hours on, 12 hours off.

12 - 18 months (log cultivation). Check out our DIY Mushroom Log Kit if you've never grow shiitake on logs before, it's got everything you need to get started.

Incubation temperature: Room temperature between 21 - 24°C. Do not let the substrate temperature exceed 30 °C.

PINNING CONDITIONS

Pinning temperature: 10 - 15°C

Pinning humidity: 90 - 100% relative humidity

Cold shock, soaking and vibration can help initiate pinning.

FRUITING CONDITIONS

Fruiting temperature:

Range: 10 - 21°C
Ideal:
15 - 17°C

Fruiting humidity: 75 - 95% relative humidity. Shiitake like to be cycled through a changing humidity state.

CO2 concentration: 500 - 1000 ppm

Important note: these growing guidelines are drawn from our years of experience as commercial mushroom growers. They are a guide only. We encourage experimentation to discover what works best for your individual conditions.
