SPECIES DESCRIPTION

Species name: Pleurotus pulmonarius

The Phoenix Oyster also commonly referred to as the Italian Oyster is similar to Pleurotus ostreatus oyster strains but with a few noticeable differences.

The Phoenix Oyster stem is longer than P. ostreatus but it doesn’t have as chewy a texture and is quite pleasant to eat. The Phoenix Oyster forms brown to pale brown caps which fade as they mature and curl up at the edges, exposing the gills. Some growers like this look where others may find it unappealing. Harvest early when caps are smaller to avoid the curling up stage.

Advantages of Phoenix Oyster is they can handle warmer sub-tropical climates making them a popular choice for beginner growers as well as commercial growers looking for an all-year-round Oyster strain.

PREFERRED SUBSTRATE

Phoenix Oysters can be grown on a variety of substrates including hardwood sawdust, barley straw, and sugarcane mulch.

Performs well in buckets and reusable containers.

For highest yields and heaviest clusters grow on supplemented hardwood sawdust or Masters Mix.

INCUBATION

Incubation period: 10 - 21 days (depends on substrate). Average incubation period is 14 days.

Incubation temperature: Room temperature between 21 - 24°C. Do not let the substrate temperature exceed 27°C.

Pinning temperature: 18 - 24°C

Pinning humidity: 90 - 100% relative humidity
