Growing details

SPECIES DESCRIPTION

Species name: Grifola frondosa

The Maitake Mushroom, also known as Hen of the Woods, is one of the best tasting mushrooms in the cultivated mushroom world. Native to Japan, Maitake translates to "dancing mushroom" because it is so prized in Japanese culture that people would dance with excitement when they found it in the forest. This mushroom is more challenging to grow and we recommend it for advanced cultivators. If you can master the Maitake you will be rewarded with a delicious meal. Maitake are full of flavour and have a firm texture, they store very well in the fridge once harvested.

PREFERRED SUBSTRATE

Maitake prefer hardwood sawdust.

For highest yields and heaviest clusters grow on supplemented hardwood sawdust or Masters Mix.

INCUBATION

Maitake need to be incubated in different phases.

Phase 1: The initial incubation phase is similar to other species. Over 3 - 4 weeks the substrate will colonise with white mycelium. Once the block is fully covered in a solid mat of mycelium the block is ready for Phase 2.

Phase 2: From this stage onwards the block should be kept in constant light. A white LED light is fine for this purpose. During week 4 - 6 dark pin formations will start to form on the top surface of the block. The light will increase the colouration and direction of these pin sets. Once the pin formation is about the size of a small fist the block is ready to be moved into the fruiting room.

Incubation temperature: Room temperature between 21 - 24°C. Do not let the substrate temperature exceed 30 °C.

PINNING CONDITIONS

Pinning temperature: 18 - 21°C

Pinning humidity: 95 - 100% relative humidity

Let the Maitake pin set form inside the closed bag during Phase 2 of the incubation cycle. Trying to get Maitake to pin in a fruiting room with other species present can be difficult.

FRUITING CONDITIONS

Fruiting temperature:

Range: 18 - 27°C
Ideal:
18 - 19°C

Fruiting humidity: 90 - 95% relative humidity

CO2 concentration: 500 - 800 ppm

Important note: these growing guidelines are drawn from our years of experience as commercial mushroom growers. They are a guide only. We encourage experimentation to discover what works best for your individual conditions.
