Corn tortillas
Olive oil
Taco seasoning
Sliced Lion's Mane mushroom
1/4 of a red cabbage, shredded
2 Tsp salad dressing
1 Avocado
Juice of a lime
1/2 cup of chopped coriander
1/4 of a red onion, finely diced
1 clove of garlic, diced
1 sliced green chilli
Step 1
Combine avocado, lime juice, red onion, garlic, chilli and coriander in a bowl and season with salt and pepper to taste.
Step 2
Combine salad dressing and cabbage in a bowl and set aside.
Step 3
Heat a dry frying pan over medium heat. When hot, add the sliced Lion's Mane mushroom and cook each side until slightly golden brown, 1 minute per side.
Step 4
Add the olive oil and sprinkle enough taco seasoning over each Lion's Mane slice to coat both sides, cook until golden brown.
Step 5
Heat the tortillas following packet directions.
Step 6
To assemble, place the tortillas on a plate and fill the tacos with the guacamole, cabbage, and Lion's Mane, then garnish with coriander.
